MASTRY begins where two worlds converge: the sun-bleached groves of Chios and the silent mountain springs of Japan. One resin. One water. One breath.
Tears of the Tree
On the southern tip of the Greek island of Chios, ancient mastic trees weep a crystalline resin the islanders have called dakrya — tears. For more than three thousand years this resin, known as mastiha, has been gathered by hand each summer, left to harden in the Aegean air before being sorted, cleaned, and carried to market. The European Union recognises Chios mastiha as a Protected Designation of Origin — PDO — meaning no other place on earth can produce it. Every tear that falls from these trees carries a lineage no factory can replicate.
It was this lineage that first stopped us. We were not looking for an ingredient; we were looking for something true.
The Meeting of Waters
Japan has long understood that water is not a background note — it is the instrument. The soft, low-mineral spring waters that define Japanese cuisine and tea ceremony have a clarity that amplifies rather than competes. When we brought Chios mastiha into contact with Japanese spring water, the result was not a compromise between two traditions. It was a recognition. The faint alpine resin, the clean effervescence, the long mineral finish: each element gave the other room to speak.
MASTRY is that conversation — made sparkling, bottled without sugar, without additives, without shortcuts.
Why Non-Alcoholic
The most important glass of the evening is often the one that asks nothing of you. A drink that sharpens attention rather than softening it; that suits a board table at noon as naturally as a dinner table at midnight. We believe premium non-alcoholic beverages have, for too long, been treated as an afterthought — a concession to the few rather than a choice for everyone. MASTRY is not a substitute. It is a destination.
The Ritual of a Quiet Glass
Pour MASTRY over a single large ice cube. Watch it settle. That moment — before the first sip, when the bubbles rise and the room contracts a little — is the one we built this for. Mastiha carries notes of pine, warm stone, and a breath of cedar. Japanese spring water holds it gently, cleanly. There is nothing else in the bottle. There does not need to be.
Our Commitment
- PDO Chios mastiha only. We use mastiha sourced directly from Chios, certified under European PDO status — the same resin that has defined the island's identity for millennia.
- Zero sugar, zero additives. No sweeteners, no flavour enhancers, no preservatives. What is in the bottle is what is described on the label.
- Japanese spring water. Soft, naturally low in minerals, chosen for its ability to carry mastiha's character without interference.
- Small-batch discipline. Quality over volume, at every stage.
Founder's Note
I started MASTRY because I wanted a drink I could reach for in any context — a meeting, a dinner, a long evening at home — and feel that I had chosen something, not simply settled for it. Premium non-alcoholic options in Japan were rare, and those that existed rarely told a story worth the price. Chios mastiha gave me that story. Japanese spring water gave me the medium. The rest was patience.
We are in the early days. Our founding members are the first to know. We are grateful for every one of them.

MASTRYについて
MASTRYは、ふたつの世界が出会う場所から生まれました。エーゲ海に浮かぶキオス島の白い大地と、日本の静かな山の湧き水。ひとつの樹脂。ひとつの水。ひとつの息吹。
木の涙
ギリシャのキオス島南部には、樹齢数百年にもなる乳香の木が自生しています。夏になると、この木の幹から透明な樹液が滲み出します。島の人々はそれをダクリア（涙）と呼んできました。マスティハと呼ばれるこの樹脂は、エーゲ海の潮風の中で結晶化し、熟練の手によって丁寧に収穫されます。欧州連合（EU）はキオス産マスティハをPDO（原産地名称保護）制度のもとで認証しており、地球上でここだけに存在する原料です。この一粒一粒に、工場では決して再現できない歴史が宿っています。
MASTRYは、その「本物であること」に出会ったところから始まりました。原料を探していたのではなく、嘘のないものを探していたのです。
水の出会い
日本は古くから、水が料理や茶の湯において「背景」ではなく「主役」であることを知っています。ミネラル分の少ない軟水は、素材の味を押し込めるのではなく、静かに引き立てます。キオス産マスティハを日本の湧き水と合わせたとき、そこにあったのはふたつの文化の「妥協」ではなく「共鳴」でした。幽かな松脂の香り、澄んだ泡立ち、余韻に残るほのかなミネラル感——それぞれの要素が、互いに呼吸する空間を与え合っていました。
MASTRYとは、その対話です。砂糖も添加物も加えず、ただ炭酸水として、瓶に詰めました。
なぜ、ノンアルコールなのか
夜の中で最も大切な一杯は、何も求めてこないものかもしれません。意識を鋭くしてくれる飲み物。正午の会議室にも、真夜中の食卓にも違和感なく馴染む一杯。プレミアムなノンアルコール飲料は長い間、「飲めない人への代替品」として扱われてきました。しかしMASTRYは代替品ではありません。それ自体が目的地です。
静かな一杯の作法
大きな氷をひとつ、グラスに入れてください。MASTRYをゆっくりと注ぎ、泡が落ち着くのを待ちます。最初の一口を飲む前のその瞬間——泡が昇り、世界が少しだけ静まり返るあの感覚のために、私たちはこれを作りました。マスティハは松の森、温かな石、微かなシダーの香りを湛えています。日本の湧き水がそれをやさしく、凜として受け止めます。瓶の中にあるのはそれだけです。それ以上は必要ありません。
私たちの約束
- PDO認証キオス産マスティハのみ使用。EU原産地名称保護（PDO）の認証を受けた、キオス島産マスティハだけを使用しています。
- 砂糖・添加物ゼロ。甘味料、香料増強剤、保存料は一切使用していません。ラベルに書かれているもの以外は入っていません。
- 日本の湧き水使用。ミネラル分が少なく清らかな軟水を使用。マスティハの個性を邪魔せず引き立てます。
- 少量生産の徹底。すべての工程で、量より質を優先します。
創業者から
私がMASTRYを始めたのは、どんな場面でも迷わず手を伸ばせる飲み物が欲しかったからです——ビジネスの場でも、大切な食事でも、夜を一人で過ごす時でも。妥協の一杯ではなく、自分で選んだ一杯を。日本にはプレミアムなノンアルコール飲料の選択肢が少なく、あったとしてもその価格に見合うストーリーを持つものはほとんどありませんでした。キオス産マスティハが、そのストーリーを与えてくれました。日本の湧き水が、その舞台を整えてくれました。あとは辛抱と丁寧さだけでした。
